Can someone explain to me why I can only see 1 core in my Q9300?

Sounds like you forgot to reinstall the OS and its using the ACPI Single CPU layer.

Had same problem with my mom's boyfriend's computer. He was using E4600 and a fresh install of Windows fixed the problem. I don't think there is any other way to fix it, but when you do a major upgrade like that you reinstall your OS anyways.

This is a new build new OS install (Vista x64 HP) System as follows:
Asus P5N_T Deluxe Rev1.02 Bios 1001
Intel Q9300 2.5Ghz currently OCed@ 3.19Ghz
TR Ultra 120 Extreme HS (Lapped)
OCZ Reaper HPC PC 8500 Dual Channel 1066Mhz @ 531Mhz x2
Nvidia GeForce 8600GTS x2 SLI Mode

Make sure you're using the latest BIOS build for your motherboard.

Check out your BIOS settings then, maybe something is wrong there.

went through everything in bios saw nothing to lead me to believe that cores could be enabled/disabled

I have have found the solution: I enabled hyper-threading technology and spread spectrum control and that cured the issue. Happily running my Q9300 2.5Ghz @ 3.19Gghz stable.
